Orange Sorbet

Orange Sorbet

Sorbet (pronounced /sɔrˈbeɪ/ sor-bay) is a frozen dessert made from sweetened water flavoured with iced fruit (typically juice or puree), chocolate, wine, and/or liqueur. The origins of sorbet have explained being either a Roman invention, a Chinese invention brought back by Marco Polo or from a Middle Eastern drink charbet, made of sweetened fruit juice and water. The term "sherbet"/"charbet" is derived from Turkish: şerbat/şerbet, "sorbet", which in turn comes from the Arabic شربات sharbāt meaning "drink(s)" or "juice."

Yield:

Makes about 3 1/2 cups

Ingredients

  1. 2 cups fresh orange juice
  2. 1 cup sugar
  3. zest of 1 medium organic orange, removed in strips
  4. 1 tbsp fresh lemon juice

Directions

  1. Combine 1/2 cup orange juice, sugar, orange zest in a small saucepan. Bring just to a simmer over medium heat, stirring occasionally to dissolve the sugar.
  2. Remove the pan from the heat, cover, and steep until the flavor strong, 15 minutes. Strain into a medium bowl. Stir in the rest of orange juice, lemon juice.
  3. Refrigerate until cold. Taste and add more sugar if needed, stirring until the sugar is completely dissolved, 2~3 minutes.
  4. Pour into an ice cream maker and freeze as directed.
