Mocha Orange Wafers
Yield:
Makes about 24-30 cookies
Ingredients
- 1-1/3 cups all-purpose flour
- 2/3 cup Dutch-process cocoa powder
- 1 1/2 tsp. finely ground espresso
- 1 tsp. salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup confectioners' sugar
- 1 teaspoon finely grated orange zest
- 1 teaspoon pure vanilla extract
- Coarse sanding sugar, for sprinkling
Directions
- Beat together butter, confectioners' sugar, orange zest, and vanilla in a large bowl until light and fluffy. Gradually add flour, cocoa, salt, and espresso until just combined.
- Transfer dough to a 12-by-16-inch piece of plastic wrap; shape into a log. Roll the wrap around the log, and twist the ends. Chill at least ½ an hour to overnight.
- Preheat oven to 325 degrees. Cut log into 1/4-inch-thick slices; transfer to baking sheets lined with parchment paper. Brush tops with water; sprinkle with sanding sugar.
- Bake until set, 9-11 minutes.
