Mocha Orange Wafers

Mocha Orange Wafers

 

Yield:

Makes about 24-30 cookies

Ingredients

  1. 1-1/3 cups all-purpose flour
  2. 2/3 cup Dutch-process cocoa powder
  3. 1 1/2 tsp. finely ground espresso
  4. 1 tsp. salt
  5. 1 cup (2 sticks) unsalted butter, softened
  6. 1 cup confectioners' sugar
  7. 1 teaspoon finely grated orange zest
  8. 1 teaspoon pure vanilla extract
  9. Coarse sanding sugar, for sprinkling

Directions

  1. Beat together butter, confectioners' sugar, orange zest, and vanilla in a large bowl until light and fluffy. Gradually add flour, cocoa, salt, and espresso until just combined.
  2. Transfer dough to a 12-by-16-inch piece of plastic wrap; shape into a log. Roll the wrap around the log, and twist the ends. Chill at least ½ an hour to overnight.
  3. Preheat oven to 325 degrees. Cut log into 1/4-inch-thick slices; transfer to baking sheets lined with parchment paper. Brush tops with water; sprinkle with sanding sugar.
  4. Bake until set, 9-11 minutes.
