Panko Oven-Fried Chicken

Panko Oven-Fried Chicken

Every once in a while everyone craves fried chicken. Maybe it is the crispy, crunchy savory outside with the tender inside or the memories of home it reminds us of. Either way, when you do crave it, turn to this recipe for oven fried chicken. The use of panko bread crumbs adds that extra little crunch.

Serves 4

Ingredients

  1. 4 boneless, skinless chicken breasts, washed and patted dry (6 oz each)
  2. ½ C panko breadcrumbs
  3. ½ tsp paprika
  4. ¾ tsp salt
  5. 1 large egg
  6. 1 Tablespoon Dijon-style mustard
  7. 1 tsp dried thyme
  8. ½ tsp freshly ground black pepper
  9. Spray bottle filled with vegetable oil or vegetable-oil cooking spray

Directions

  1. Preheat oven to 400ºF. Mix eggs, mustard, thyme, and pepper in a shallow dish. Place panko in separate bowl and add paprika and salt.
  2. Dip chicken in egg mixture and then in panko. Shake gently and add chicken to baking pan that has been sprayed with cooking spray.
  3. Place in hot oven and bake for approximately 30 minutes or until juices run clear. Serve immediately.
