Green Tea Ice Cream

Green tea ice cream (抹茶アイスクリーム Matcha aisu kurīmu) or (抹茶のアイスクリーム Matcha no aisu kurīmu) is a Japanese ice cream flavour. This flavour is extremely popular in Japan and other parts of East Asia, and almost all ice cream manufacturers produce a version of it, including foreign vendors such as Häagen-Dazs. The name matcha comes from a specific type of green tea used in the Japanese tea ceremony. Green tea ice cream is also sold in monaka form.

Ingredients

  1. 4 egg yolk
  2. 3/4 cup granulated sugar
  3. 2 tsp Soy Sauce
  4. 1 2/3 cups heavy cream
  5. 1/3 cup+1 tbsp strongly brewed green tea

Directions

  1. Beat egg yolks with sugar and soy sauce in a bowl.
  2. Scald the cream; take off heat and stir in the cold tea. Add egg mixture and cook over very low heat, stirring constantly until mixture thickens.
  3. Either sieve the mixture, or put in blender, then freeze it. Stir the mixture a few times for a smoother texture.
  4. When mixture is partially frozen, break up the crystals by stirring. The ice cream should be served soft.
