The Enlightened Sandwich

Not every sandwich has attained an awareness that frees it from the Buddhist cycle of rebirth. This one, though has and makes last-minute dinner planning positively transcendent.

Yield:

Serves 2

Ingredients

  1. For the sandwich:

  3. 2 individual rolls of crusty bread
  4. Red cabbage, shredded and tossed with a bit of lime juice and salt
  5. Sliced avocado
  6. Sliced tomato
  7. Sliced provolone cheese
  8. Cooked chicken, shredded
  9. .
  10. For the Chipotla Aioli:
  11. ==================
  12. ¼ cup mayonnaise
  13. 1 canned chipotle pepper in adobo sauce, minced, plus 1 Tablespoon adobo sauce
  14. 1 garlic clove, mashed to a paste with ¼ teaspoon salt
  15. Juice and finely grated zest of ½ lime (about 1 Tablespoon of juice)

Directions

  1. To make the chipotle aioli, mix all ingredients together in a small bowl, then spread the aioli on the bread.
  2. Layer the bread with the cabbage, avacado, tomato, provolone, and shredded chicken. Serve as it or toast briefly.
