Chili Lime Fajitas
A fajita (pronounced /fəˈhiːtə/) is a generic term used in Tex-Mex cuisine, referring to grilled meat served on a flour or corn tortilla. Though originally, specifically only skirt steak, popular meats today also include chicken, pork, shrimp and all cuts of beef. In restaurants, the meat is often cooked with onions and bell peppers. Popular condiments are shredded lettuce, sour cream, guacamole, salsa, pico de gallo, cheese, and tomato.

Ingredients
- 1 lb chicken breast, cut into strips
- 1 green bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 small onion, cut into strips
- 1-2 cans black beans
- 1-2 limes
- 1 clove garlic, finely minced
- 1/8tsp cumin
- 1/8tsp black pepper
- 1/8tsp red pepper flakes or cayenne (optional)
- 1/4tsp chili powder cilantro
- 10" flour tortillas
- cheese (to top)
- tomatoes (to top)
- lettuce (to top)
- salsa (to top)
- cilantro (to top)
- lime juice (to top)
- sour cream (to top)
Directions
- In a bowl, add juice of 1- 1 1/2 limes, garlic, and spices. Add about 1/2 Tbsp chopped cilantro. Add chicken strips to juice mixture. Turn to coat. Remove chicken strips from lime juice mixture and cook in a large skillet till done.
- Remove from skillet. Add onions and peppers to skillet and cook through. Return chicken to skillet and heat through.
- Assemble fajitas at the table with beans, chicken/pepper mixture, and favorite toppings.
