Sopapilla
This crisp, puffy, deep-fried pastry, resembles an air-filled pillow. The sopaipilla is thought to have originated in Albuquerque, New Mexico, more than 200 years ago. It's a favorite Southwestern U.S. dessert, usually served with honey or syrup flavored with anise or cinnamon. Sopaipillas are also sometimes filled with savory ingredients like refried beans.
Ingredients
- 6 c. flour
- 1 1/2 tbsp. oil
- 1 tsp. salt
- 2 tsp. baking powder
- 1 1/2 c. warm water
Directions
- Put all dry ingredients in a mixing bowl. Add oil and rub through hands until blended. Add water a little at a time; until the dough feels the right consistency. Let it stand 10 minutes before rolling.
- On a well floured board, roll egg-sized pieces approximately 6 inches in diameter. Fry sopapillas in hot oil until golden brown on both sides. Cut into quarters and serve hot with honey.
