Grilled Skirt Steak

Ingredients
- 2 whole pieces of skirt steak about 2 lbs
- Kosher salt and freshly
- ground black pepper
- Extra-virgin olive oil
Directions
- Heat grill to high and wipe it down with an oiled paper towel to create a non-stick surface.
- Drizzle skirt steak with a little olive oil.
- Season with plenty of salt and black pepper.
- Grill steak until it's still slightly pink in the center. (4-5 minutes first side, 1-2 minutes on the second side).
- Remove from grill and let it rest for a few minutes to allow the juices to settle.
- Slice across the grain into thick pieces.
