Pasta with Beans and Vegetables

Home is where the healthy foods are. Pantry basics such as rice, beans, and tea not only provide the basis for wholesome meals but also cost pennies per serving.

Yield:

Makes 8 servings

Ingredients

  1. 2 Tbs oil
  2. 3 garlic cloves, minced
  3. 1 can (28 oz) tomatoes, diced or crushed
  4. 4 cups fresh spinach
  5. 2 cups cooked red kidney beans
  6. 2 cups pasta shells, cooked and drained
  7. Salt and pepper to taste

Directions

  1. Heat oil in a large pot. Add garlic and cook until lightly browned.
  2. Add canned tomatoes and spinach. Bring to a boil.
  3. Cover and cook over medium heat for 10 minutes. Stir often.
  4. Add kidney beans and cook for 5 more minutes.
  5. Stir in prepared pasta and serve hot.
  6. Refrigerate leftovers.
