Grilled Skirt Steak

Grilled Skirt Steak

 

Yield:

 

Ingredients

  1. 2 whole pieces of skirt steak about 2 lbs
  2. Kosher salt and freshly
  3. ground black pepper
  4. Extra-virgin olive oil

Directions

  1. Heat grill to high and wipe it down with an oiled paper towel to create a non-stick surface.
  2. Drizzle skirt steak with a little olive oil.
  3. Season with plenty of salt and black pepper.
  4. Grill steak until it's still slightly pink in the center. (4-5 minutes first side, 1-2 minutes on the second side).
  5. Remove from grill and let it rest for a few minutes to allow the juices to settle.
  6. Slice across the grain into thick pieces.
