Penne with Italian Sausage

Penne with Italian Sausage

One of the easiest dinners to put together after working all day. By the time the water boils and the pasta is cooked the sauce is finished. You can add fresh clams in the shell, just ommit the fennel seed. When the sauce is ready add the clams, cover and cook just until the clams open. Toss in the basil and serve.

Ingredients

  1. 2 Italian Sausages
  2. Olive oil
  3. 1 to 2 cloves of Garlic
  4. 1 Can of Quality Italian Tomatoes
  5. Fennel seed (to taste)
  6. Hot red pepper (to taste)
  7. Dried basil (to taste)
  8. Salt (to taste)
  9. Pepper (to taste)
  10. Kalamata Olives (optional)
  11. 4-6 sprigs fresh basil
  12. Farfalle or other favourite pasta shape.

Directions

  1. Par boil sausage to firm up. Remove sausage skin and slice into 1/2 inch slices.
  2. Saute the sausage in olive oil until lightly brown. Add minced garlic, canned tomatoes and dried seasonings.
  3. Break up tomatoes with a fork. Add the olives if using. Simmer while the water is coming to a boil and the pasta is cooked.
  4. Just before serving toss in a handful of chopped fresh basil.
